I had several visits to a coffee roaster and have been analyzing their roasting process for a while. I realized a strange factor about the aroma of coffee beans right after roasting. when the coffee beans just have been roasted they don’t have a coffee-like aroma at all! and I’ve also heard that roasters let the coffee beans rest for about a week to let them gain aroma. is it true? do stale coffee beans smell better?

after the roasting process, coffee beans need to degas. and it has nothing to do with coffee beans going stale. High-quality coffee beans smell great right after roasting as well. however, If you do not let them degas they will taste grassy and not fully coffee-like!
