He found out that one of his coffee shipments which were soaked by seawater during shipping almost had no caffeine. Further experiments with different chemicals resulted in the birth of decaf coffee beans.
So the main way of decaffeinating is leaching. But with what solvent? The more used solvents are methylene chloride and ethyl acetate. The beans first are to be soaked in water and then be covered in a solution containing either of those solvents. then, the solvent rich in caffeine is drawn out of the vat.

Swiss water method

first used in the 30s in Switzerland, the Swiss water method sees the beans soaked in water. Then, the caffeine-rich water is strained through activated carbon to capture the caffeine. The process is known for no use of solvent.
