the cherries are spread out and to dried in the sun for 2–3 weeks then they remove the dried fruit flesh. The natural process adds fruity flavors to the coffee.
In this method, only a small amount of flesh remains on the seeds. so the remaining sugar makes it sweeter. The next step is drying the seeds. By the end of the process the seeds and caramelized and depending on how much flesh remains on the seeds, the color can change from yellow to dark
